TASTING NOTES
The colour is intense, ruby red, with a myriad of garnet hues. The aroma tends towards sweet, recalling ripe blackcurrants, slightly syrupy with delicate notes of vanilla. To the palate it is pungent, warm, full-bodied and intensely tannic, sometimes young but certainly sweet.
TIPS FOR PAIRING
The peculiar, full smoothness and light tannins of merlot grapes are easily evident in this wine. It is great with prime red meat such as a simply grilled filet.
WINE MAKING AND REFINING
We separately collect 4 clones of the Merlot and Cabernet growing in two vineyards. This way we create many potential variables, expressive the characteristics of each soil. Once harvested, part of the grapes are taken immediately to the winery where fermentation begins in steel vats, part are dryed for three weeks. To transform strength into elegance, the wine rests in wooden vats. Wood is a fundamental key to find the softness we seek in each bottle.
